Newrest is recruiting a Executive Chef, to be based in Luanda, Angola.
Duties
- Prepare and cook dishes
- Organize resources within the Kitchen and other areas
- Ensure timely preparation of food as per set menu and within set cost
- Ensure quality, quantity and hygienic food is served with particular emphasis on presentation Ensure minimum/no wastage (excess food balance)
- Plan and cost menus in coordination with the onshore coordinator keeping in mind the basic principle of FIFO
- Support storekeeper in stock management
- Allocate work to kitchen staff
- Ensure timely pre preparation/mise-en-place (wash, clean, cut vegetables, fruits, meat, chicken, fish and bakery products) and cooking
- Ensure proper kitchen area cleanliness
- Know, implement and observe all safety rules
- Ensure that all norms, procedures, policies, documentation logs pertaining to HSE/HACCP company standards are followed and records maintained
Requisites
- At least 3 years in a similar position at an international level in a hotel is mandatory
- English and French fluent, Portuguese is a plus
