Bakery Specialist

Robert Walters is recruiting a Bakery Specialist, to be based in Luanda, Angola.
Duties
- As the Bakery Specialist you will develop and implement world class standards in bakery section of the model store
- Introduce internationally favourite products and adjust the recipe according to local taste if and when required
- Manage display and life shelf life of all products
- Train bakers to improve quality and food safety standards
- Monitor and ensure compliance among staff with personal hygiene
- Ensure the upkeep and proper maintenance of equipment and machinery all times
- Ensure compliance of all food safety standards in bakery department
- Implement HACCP standards Develop and implement world class standards in bakery section of the model store
- Work closely with the model store manager to sustain bakery standards and quality
- Produce bakery items as per the recipe and plan/execute the production
- Train counter staff for correct weighing and packaging of bakery products, monitor compliance
- Maintains the bakery counter and production area in a clean and neat manner
- Make sure all bakery staff comply with personal hygiene
- Uses and keeps bakery equipment and machinery clean at all times
- Ensures compliance of all food safety standards in bakery department
- Familiar with HACCP standards, preferably participated implementation actively
- Responsible for stock control of all ingredient and ensure production plan is in order
- Monitor and reduce bakery wastage as well as daily margins
- Monitors and optimises the operating cost of bakery i.e. labour cost, overtime, packaging cost etc.
- Monitor competitors in terms of range, quality and prive; Take actions to maintain competitive edge
- Monitors ingredient stocks and place orders to meet production plan
- In this role you will be responsible for the bakery production planning and execution, implementing food safety and hygiene, training staff as well as ensure sales targets for the model store
Requisites
- Minimum 5 years experience in a similar role
- Speak English and Portuguese
- Have the ability to work under pressure
- Knowledge about managing a bakery and ensuring sales targets are met
