Executive Chef


Newrest is recruiting a Executive Chef, to be based in Luanda, Angola.

  • Prepare and cook dishes
  • Organize resources within the Kitchen and other areas
  • Ensure timely preparation of food as per set menu and within set cost
  • Ensure quality, quantity and hygienic food is served with particular emphasis on presentation Ensure minimum/no wastage (excess food balance)
  • Plan and cost menus in coordination with the onshore coordinator keeping in mind the basic principle of FIFO
  • Support storekeeper in stock management
  • Allocate work to kitchen staff
  • Ensure timely pre preparation/mise-en-place (wash, clean, cut vegetables, fruits, meat, chicken, fish and bakery products) and cooking
  • Ensure proper kitchen area cleanliness
  • Know, implement and observe all safety rules
  • Ensure that all norms, procedures, policies, documentation logs pertaining to HSE/HACCP company standards are followed and records maintained
  • At least 3 years in a similar position at an international level in a hotel is mandatory
  • English and French fluent, Portuguese is a plus
  • Only short listed applicants will be contacted

  • Rotation 3 months/1 month
